Happy Day

I like today.  It’s been good so far.  I planted a few flowers in my yard.  Zinnias and petunias just like my Mom used to plant in our yard when I was a kid.  The sun is shining and a little breeze is blowing.  I feel good today.  The day will get busier and crazier a little later, but for now…it’s not.    



I’m serving leftovers for dinner tonight. The kids will not be happy about that.  There are five of them and it is not possible to make them all happy at dinner time unless we are having pizza.  But Mr. Wonderful will be, so maybe that will kind of even things out. I hope so anyway.  And I’m happy that I don’t have to stress over what to make for dinner and then try to make it in a shorter amount of time than I would like to have to make whatever it is because I would have had more time to make it if I had only planned ahead a little better. Hopefully that came out right. If not, maybe it’s close enough that you can at least get the gist of what I was trying to say. Well, anyway, I’m glad I don’t have to go through all that tonight.

Huckleberry Jam

I made 12 and a half pints of Huckleberry jam last night. While I was at my parents house, my wonderful husband picked Huckleberries and put them in the freezer for me so that I could make the jam when I was ready. I always follow the directions that come in the pectin box when I make jam, but they don't have instructions for huckleberry so I found this recipe online. Of course we had to try some before we could go to bed last night. Warm jam on toast. MmmmmMmmmm! It was really good. Just sweet enough, and 12 pints of jam will not last very long in our house, so I've got lots of jam yet to make. Yum!

Scones

The other day we ran out of bread and running to the store just wasn't going to happen. So I started making bread, which I usually do about once a week. But there was no way it was going to be done by lunch time and I had to feed my three younger children plus two friends. What to do? I made scones. I call them scones, I think some people call them fry-bread. They are flat pieces of bread dough fried in oil. Not very healthy, but they taste really good! Especially with some honey butter on top. So good! The kids ate them all up.


I'd really like to get some more quick lunch ideas. We eat a lot of bread and leftovers, and we like it that way, but it would be nice to have a little variety now and then. Or at least a back up for the next time we run out of bread.
